Creamy Cauliflower Pasta...by Juli

I am always amazed at the different way's to eat veggies! I would have never put cauliflower with kalamata olives with pasta, but it was actually pretty good. The addition of white wine, fresh parsley and oregano made this meal really fresh tasting. If you are on a restricted meat diet or you are trying to shed a few winter pounds this is a good option. It calls for whole wheat pasta, but I opted for the forbidden regular 'ol pasta noodles! Did I mention that red pepper flakes spiced it up?!?!

Hi "J's",

I just realized that you girls are providing recipes, so my earlier comment was not relevant! (I deleted it)

But, the one recipe I really wanted wasn't posted, the one from this Blog, the Creamy Cauliflower Pasta. Could you email it or FB it to me? Or re-post here on the blog.

I think you three young women are doing such an incredible job!! I am so enjoying your experiences with this, and your family's reaction to the different meals you are preparing!

I just today checked back in to see how the project was going, and was so impressed.

I am looking forward to many more Blogs, and recipes!!!

My Laurie is on a restricted diet, so, it's fun to find new recipes that I can tweek and make OK for her to have.

Sorry it took me so long to respond!
Here is the recipe for the Creamy Cauliflower and Pasta

1 Head cauliflower, cut into florets
1 pound whole wheat pasta (i used regular pasta)
1/3 cup extra virgin olive oil
4 garlic cloves, thinly sliced
1/2 cup dry white wine
1 1/2 T chopped fresh oregano
1/4 cup kalamata olives, pitted and chopped
1 t re-pepper flakes
4 sprigs fresh italian parsley, stemmed and chopped
salt
pepper
1/4 cup shredded asiago or parmesan cheese

Bring a large pot of salted water to a boil.
Add the cauliflower and cook for 5 minutes, or until tender
Remove with a slotted spoon to a medium bowl, reserving the water.
Cook the pasta according to the package directions.
Drain and transfer to a large serving bowl.

While the pasta is cooking....
In a large skillet, heat the oil over medium-high heat. Add the garlic and cauliflower and cook for 5 minutes stirring and breaking up the cauliflower into bite size pieces.
Add the wine, oregano, olives, and red-pepper flakes and cook for 3 minutes, or until the cauliflower is very tender.
Add the parsley and season wit salt and pepper to taste.
Pour over the pasta and top with the cheese.
