Nori-Wrapped Salmon with Wasabi Mash....by Jessica


A full family thumbs up dinner (including family friend Natalia). There was a thumbs down from a little someones thumb in the upper right hand corner (I will let you sit in suspense and just try to imagine which little one THAT would be) but apparently changed his mind due to peer pressure.

Nori-Wrapped Salmon with Wasabi Mash
4 (6oz.) Salmon fillets
Cracked Black Pepper
1 Sheet Nori, quartered
1 Tbs. vegetable oil
2.5 oz. melted butter

Wasabi Mash
2lb. boiling potatoes, peeled & chopped
1 oz. butter
1 Tbs. wasabi paste
1/2 cup sour cream
2-3 Tbs. milk
sea salt

To make the mash, place the potatoes in a saucepan of cold salted water and bring to the boil. Cook until tender when tested with a skewer. Drain and return to the warm pan. Add the butter, wasabi, sour cream and milk and mash until smooth. Stir through the salt, cover and keep warm. To cook the salmon, sprinkle each fillet with pepper and wrap in a piece of nori. Heat a frying pan over high heat. Add the oil and salmon and cook, skin side down, for 3 minutes. Turn and cook for a further minute or until just cooked through. To serve, place the mash on plates, top with the salmon fillets and spoon over the melted butter. Serve with lemon wedges and steamed green vegetables.
