Present Day!!!....by Justine



It doesn't get much better than breakfast in bed! That's how our special day started. Malia and her co-conspirator (Grandma) presented us with a recipe from her cookbook. "Breakfast in a Cup" was layers of grits, sausage and scrambled eggs. Phoebe could hardly control herself because she's used to plopping herself right in between mommy and daddy. So we put the girls to work bringing in our presents while we ate. Crisis averted - Phoebe's so easy to sidetrack!

On to PRESENTS! With the exception of my present to Joel (Wool Dress Overcoat), ALL our presents were eco-friendly/used.

Malia couldn't be happier with her American Girl doll (craigslist) and doll clothes (ebay). I tried somewhat unsuccessfully to replace Phoebe's yellow hardcover "My Book of Bible Stories" with a new softcover one. She did however, really like her new "Diego" counting game and magnetic paper dolls.

My present from Joel was the best! He managed to fix a cassette tape that I have kept for over 20 years! It's titled "Crack Ups with Justine and Jessica". Some of it was REALLY boring. Jessica and I are about 8 and 11 years old - READING from the magazine "Highlights from Children". The real highlight was on the other side of the tape. Neil is about 5 and frankly, I've never heard him talk so much! Besides chatting up a storm, he managed to record the following: Juli singing (cute), Justine and Jessica playing the piano (yikes), "Mother Troup" refusing to be interviewed, Dad saying "there's no reason to hit". I can't wait to edit the tape and send out some clips to everyone!

Last but not least was dinner, "Italian Pan-Seared Tuna" - A real hit. Super easy, lots of flavor and healthy! I highly recommend this one!

Breakfast in a Cup

GRITS
1/2 cup quick cooking grits
3 tbls. butter
1/4 cup half and half

SAUSAGE
1 pound ground bulk country sausage

EGGS
4 eggs
1/2 teaspoon salt
pepper
1 tbls sour cream

TOPPING
grated cheese
parsley leaves for garnish

Cook grits according to directions adding 1 tbls butter and half and half.

Cook and crumble sausage. Drain on a paper towel.

Melt 2 tbls butter over low heat in skillet, break eggs into small bowl. Add salt and pepper, 2 tbsl water and sour cream to the eggs. Whisk together, turn heat up to medium pouring in eggs when butter sizzles. cook until they begin to "set" then turn over 3 or 4 times.

Assemble Cups: Spoon about 1/4 of the grits into each of 4 cups, top with 1/4 of the sausage and about 1/4 the eggs. Top with grated cheese and parsley.

Italian Pan-Seared Tuna (Serves 2)

2-3 Cloves of garlic
1 pint ripe red and yellow cherry tomatoes
handful of kalamata olives
small bunch of fresh basil
1 lemon (small or 1/2 large)
2 tuna steaks (about 7 oz. each 1/2 inch thick)
salt and pepper
1 tsp. dried oregano
olive oil
4 anchovies

Prepare
-Put a large frying pan over high heat
-Peel and finely slice garlic
-Halve your tomatoes and cut any larger ones into quarters
-Pick the basis leaves of the stalks and put he smaller ones to one side for serving.
-Halve your lemon

Cook
-Season tuna steak with salt, pepper and sprinkle oregano
-Put a lug of olive oil in the hot pan, followed by tuna steaks
-Cook for 1 minute on each side, then remove to a warm plate
-Put the pan back on the heat with a little more oil
-Add the garlic and olives and cook for 1 minute, then add anchovies and tomatoes
-Squeeze in the juice from 1/2 lemon, cook for 1 minutes
-Throw in whole basil leaves, tearing up larger ones.
-Taste for seasoning, add more lemon, salt and pepper if needed.

Serve
-Divide the sauce on to your plates
-Slice up your tuna steaks into 3/4 inch thick pieces and lay over the top
-Sprinkle with remaining basil leaves
