Has anyone noticed that I haven't been posting any meals lately? Weird huh?!? Well lets talk about something else....Goat cheese chicken enchiladas!!! Back in the day when I used to work at Mixx they made the yummiest goat cheese chicken enchiladas. Since then, I have made my own rendition. Kit brags about them so they must be good! Any-who...Aunt Marlene, I want to submit this recipe to Sunset Magazine for the 30 minutes or less section. Can you tell me the requirements? Also I bought rotisserie chicken and shredded the meat for time and convenience? How do you think that will fly?

Ok...the recipe, like I said is made up, so here goes:
Goat Cheese Chicken Enchiladas
1 rotisserie chicken shredded (pre-cooked by Safeway) :)
1 pack of 10 flour tortillas (soft taco size)
1 big can of green enchilada sauce
1 can of olives - sliced
5 green onions - chopped
a handful of cilantro - chopped
1 small package of goat cheese.
So basically i got all of the ingredients ready and then I laid out 10 tortillas, evenly dispersed the ingredients, rolled up, put in a 9x13 pyrex baking dish and poured the enchilada sauce over.
Oh I forgot I also grated some monterey jack cheese and sprinkled over the sauce. Back at 350 for 20-30 until the sauce is bubbling.

I would say buy shredded cheese and use the rotisserie chicken, that's all acceptable
