2 o...Cheat's Apple Tarts<br />1.5 sheets puff pastry<br />2 oz. butter, melted 1 Tbs. sugar<br />3 apples, cored and thinly sliced<br />1/2 tsp. cinnamon<br />2 Tbs. brown sugar<br />1 Tbs. lemon juice<br />Preheat the oven to 355°. Brush the pastry sheets with the butter and cut into six pieces. Press into greased muffin tins, discarding the excess pastry. Sprinkle with the sugar. Combine the apples, cinnamon, brown sugar, and lemon juice and divide between the pastry cases. 1...Thai Lime Lemongrass Chicken<br />2 tsp vegetable oil<br />1 Tbs grated ginger<br />1 stalk lemongrass, finely chopped<br />1 tsp. chili flakes<br />21 oz. chicken mince - not sure if that meant ground but I minced some chicken breasts in my food processor.<br />1/4 cup lime juice<br />1/4 cup fish sauce<br />1 Tbs. sugar<br />3/4 cup cilantro<br />3/4 cup basil leaves<br />4 green onions, sliced<br />Heat a frying pan over high heat. Add the oil, ginger, lemongrass and chili and cook for 1 minute. Add the chicken and cook, stirring for 6-7 minutes or until cooked through. Stir through the lime juice, fish sauce, sugar, cilantro, basil and green onions.
