I just wanted to share my two favorite recipes right now. I have posted the recipe for the chickpeas before (see here) but the edamame is something that i just tried for the first time the other day. It is reeeaaalllyy delicious! I am sure you could cut the parmesan cheese down to make it healthier and it would be just as good. I hope you try it!
Parmesan edamame:
1 (12 ounce) package frozen shelled edamame
1 tbsp olive oil
1/4 c grated parmesan cheese
salt & pepper to taste
15 min. in a 400 oven
