Baked Fish and Chips...by Jessica

Tonight's dinner was baked fish and chips. I used albacore and unfortunately cooked the poor thing to death so it was pretty dry. Fortunately, I had foreseen that possibly the fish may be dry and had made an aioli which moistened it up. Anything's tastier with a mayonnaise based sauce on it, right? This was an easy dinner which I'll probably make again and again... much to my children's dismay.

On a shopping note, I have another dilemma I'm battling with. There's a little something new I could buy, as a present for someone who will eventually NEED this item because the one they have will be broken and unusable soon. Since I've had a hard time finding this particular item and there's only one available and it won't be available forever, should I buy it now and tuck it away until the current item breaks? Or is that cheating? Kind of, huh? We said presents were okay, right?

I also wasn't going to speak of an incident today...but I will be honest. I forgot my coffee mug. And I looked so sad a dear friend bought me a coffee and I felt so guilty sitting in Starbucks drinking my tall, decaf, extra hot, nonfat, no whip, extra foam caramel macchiato in that wasteful little cup.

2 ib. desiree potatoes, thinly sliced ( I don't know what kind of potatoes those are, but I used fingerling)
1 Tbs. Vegetable oil
4 (7oz) firm white fish fillets
1 tsp. finely grated lemon rind
sea salt & cracked black pepper
Preheat the oven to 425 degrees. Place a baking tray in the oven for 10 minutes to heat. Place the potatoes on a piece of baking paper. Place on the hot tray and sprinkle with the oil and salt and bake for 20 minutes. Sprinkle the fish with the lemon rind, salt & pepper, add to the tray and cook for 10 minutes or until the fish is just cooked through.
(I didn't use baking paper, I just oiled a pan and the potatoes did not stick)

Since it is confession time, I have something to say. I don't own a coffee mug due to the fact that I am not a regular coffee drinker. And I haven't found a decent used one that I feel comfortable wrapping my lips around, so unfortunately I have been very wastful in this matter. On the other hand I have been really trying hard to use my reusable bags at the grocery store and putting my vegetable cuttings in the yard waste bin rather than the garbage can. Ok, I feel better now.....Juli

regular coffee drinker, take form me i cant get thru the day with out 3 cups of coffee
