Jessica walked in and caught me in the act of making enchiladas to feed a small country. She was amazed by the mass enchilada making and insisted I share with you.
The hubsters dear grandma passed away a week ago and sometimes I have a hard time consoling. The one way I know how to comfort is through food. So the echilada rolling began. If you make enchiladas I reccommend this method: get all the innerds ready, mix them together (chicken, onions, cheese etc) lay out your tortillas and evenly distribute. Then roll away!
The Fox family had smiles on their face with enchiladas in their bellies. Mission accomplished.

Little mamacita. To be honest, the thing that amazed me the most was that you were making them directly on your countertop... you seem so much more...particular than that.
Oh Jess I have you fooled, I am not that particular! Plus where else would I do it?!? The only other large flat surface i could use would be my bed or the floor. I think the counter top was the best option ;)
