I made a dinner that Zack said it "tasted like it came from an authentic Japanese restaurant". So I thought I'd share the recipe because it's SO easy as well and it's great for the nights when you don't have much in the fridge.
Ingredients for broth:
4 cups water
1 ramen noodles seasoning package (preferably Sapporo Ichiban)
3 Tbs. soy sauce
1 Tbs. mirin
1 Tbs. rice wine vinegar
2 tsp. sesame oil
Combine all ingredients and simmer in covered pot.
Topping suggestions:
Cooked noodles (I used udon, but ramen or rice noodles would work wonderfully as well)
Green onions, sliced
Lightly stir fried or steamed veggies (I used broccoli, bamboo shoots & mushrooms)
Hard boiled eggs
Meat or shrimp (perfect if you have a little bit of leftovers)
Nori strips
I assembled the noodles in the bottom of a bowl, covered with the broth and toppings. I like spicy so I added chili paste and sriracha.
