Vegan Dinners...by Jessica

Well, now that I've come to ACCEPTANCE of the vegan eating, I thought I would share what we ate last week for dinner.  

The first night was stuffed poblano peppers with beans and rice.  The peppers (roasted & skins peeled) are stuffed with black beans, bell peppers, leeks and fava bean leaves, then baked in the oven for 25 minutes or so.  I made a quick sauce out of canned tomatoes, onion, cilantro, bird peppers, chile powder, garlic & lemon juice whizzed in the food processor.  


Weird, huh?  I didn't know you could eat fava bean leaves.  We got them in our weekly veggie box and they're tasty.  

Next up were black bean veggie burgers topped with a lemon aioli and a fava bean & avocado dip with roasted vegetables. (gosh the picture is awful, they tasted better than they look.  And for those of you who are wondering, the base of the aioli is soy mayonnaise)


Then we had chili topped with cilantro, pickled jalapenos, carrots & onions, tortilla chips and avocado.  (and cheese if you were so inclined to partake in that)


 Finally we had grilled portobello mushrooms and peppers, salad and oven roasted "french fries". (grilled chicken for the kiddies instead of the portabello's.  I can only torture them so much)

The star of the bulk of the meals were...beans.  On Monday I soaked and cooked up three pots of beans. (1) pinto beans, which half were used in the chili and half were made into refried beans.  (2) black beans, which were used for the stuffed poblanos, chili and black bean burgers.  (3) garbanzo beans, which I used to make Zack some hummus.

So that's it.  What I'm feeding the peeps for dinner.  It doesn't appear that any of us are starving yet.

Thanks for sharing, it's giving me some great ideas. Yesterday I made stir fried lentil sprouts: delicious. It's sesame oil, garlic and sprouted lentils with some salt and pepper... It's very quick too... That's going to be a new 'staple' in our house.

hey Gina. I did use a recipe for the black bean cakes previously, but I couldn't find the recipe again so I just kinda winged it. It has black beans (obviously), onions, bell peppers, bread crumbs, hummus and various spices. You put half of it it the food processor which then acts as a binder for the cake. The portabellas were marinated in balsamic & olive oil. Zack makes a Mexican red sauce that was my inspiration for the red sauce for the stuffed poblanos.

Your food looks amazing! I wish I had the energy to cook all that yummy stuff and some different kids so they might eat it! I might be able to pass the black bean burgers by them without too much trouble...

megan, my kids gave me problems with all of these dinners. i modified much of it for them, like I didn't stuff a poblano for them - served it to them with tortillas instead. I still have a gagger in the house, so vegan dining is no fun.
