Big thumbs down dinner :(...by Juli

My cookbook "Simply Organic" is divided my seasons. It makes it nice to know what and when ingredients are available locally. The only bummer is that I started in the deep winter section, which basically entails a lot of root vegetables. So the other day I made Beet and Parsnip Soup with Dill Cream. I LOVE beets, while my husband really despises them..."they taste like dirt" to be exact. We both tried to keep an open mind, but I have to admit it was really beet-y and I have discovered that I do not like parsnips. They are like really bitter carrots that turn mushy when cooked. To add to (dilute) the meal I made Rosemary Lemon Biscuits. Sound good? I thought so too, but they are made with wheat flour, and as anyone can tell you, white is better than wheat when it comes to taste. Well lets journey down the curious road of this meal and end the evening with a good hearty dessert....

Hearty in the fact that it was basically baked oatmeal with custard on top...Oatmeal?!?! That's not dessert! This recipe (Oat Berry Custard with Dried Cherries) was made with Oat Berries also known as Groats. These are hard to find and are basically a purer oat grain that has more nutrients. It actually was a better breakfast than dessert. All in all, this was a good day to
experiment....
