Bring your pennies....by Justine

Costco had a pink plastic "Hello Kitty" bubblegum machine that Malia was eyeing pretty heavily after Christmas. Somehow we made it out of there without it. We were rewarded with an even better all-metal, heavy duty, red one from the Goodwill the other day! It was even brand new in its original box! Right now its filled with Mike and Ike Zours and Skittles. Yummm.

Last night's dinner was a big hit. I was a little reluctant to try a new "Shepherd's Pie" recipe since it's been a regular Troup meal all my life. But I have to say Jamie O's was REALLY good! My biggest reward was when Phoebe asked for seconds for literally the first time in her life! Whoa. Recipe to follow in comments.

British Beef and Onion Pie (Shepherd's Pie)
{as usual I made a couple of modifications based on what I had and to serve a few more people, sorry Jamie}

3 medium onions
2 carrots
2 stalks celery
2 sprigs of fresh rosemary
olive oil
2 bay leaves
1 pound ground beef
1 pound ground turkey
2 teaspoons Colemans prepared English mustard (jarred)
2 teaspoons Marmite (I forgot to buy some of this so it didn't make it in my pie)
2 tablespoons Worcestershire sauce
4 teaspoons flour
1 quart beef broth

Mashed potatoes (about 2 1/4 pounds potatoes)

Prepare filling
Peel and roughly chop your onions, carrots, and celery. Remove the rosemary leaves from the woody stalks and and chop finely. Place a large pan on high heat. Add 2 lugs of olive oil, all the vegetables, rosemary and the bay leaves. Stir and cook for around 10 minutes or until veggies have softened and lightly colored. Stir in the ground beef and turkey. Add the mustard, Marmite, Worcestershire sauce and flour. Add the beef broth and bring to a boil. Turn the heat down and simmer with the lid slightly askew for about 40 minutes, stirring occasionally. Meanwhile, whip up some mashed potatoes.

Make the Pie
Using a slotted spoon, fill a large pie or other baking dish with the prepared filling and then a bit of the leftover juices. Top with mashed potatoes. J.O's version is to top it with 2-9" pie crusts one on top of another but I was too lazy for that. Then bake at 350 until filling is bubbly (about 40 minutes).

Of course Jamie Oliver's Shepherd's Pie is good! He's awesome.
So cute that you put it in a real pie dish.
