Last day of the month! Had to get some recipes in. We had Thai Lime and Lemongrass Chicken (which was supposed to top rice noodles, but I served with lettuce and we ate as lettuce wraps). Definite big hit; easy, healthy and very very tasty. We really didn't need dessert, but we stuffed ourselves with Cheat's Apple Tarts, which were quite tasty and another easy dessert which I will definitely make again because it fits into my poor measuring and non-direction following baking lifestyle.

Thai Lime Lemongrass Chicken
2 tsp vegetable oil
1 Tbs grated ginger
1 stalk lemongrass, finely chopped
1 tsp. chili flakes
21 oz. chicken mince - not sure if that meant ground but I minced some chicken breasts in my food processor.
1/4 cup lime juice
1/4 cup fish sauce
1 Tbs. sugar
3/4 cup cilantro
3/4 cup basil leaves
4 green onions, sliced
Heat a frying pan over high heat. Add the oil, ginger, lemongrass and chili and cook for 1 minute. Add the chicken and cook, stirring for 6-7 minutes or until cooked through. Stir through the lime juice, fish sauce, sugar, cilantro, basil and green onions. Serve with rice noodles or salad leaves.
Cheat's Apple Tarts
1.5 sheets puff pastry
2 oz. butter, melted 1 Tbs. sugar
3 apples, cored and thinly sliced
1/2 tsp. cinnamon
2 Tbs. brown sugar
1 Tbs. lemon juice
Preheat the oven to 355°. Brush the pastry sheets with the butter and cut into six pieces. Press into greased muffin tins, discarding the excess pastry. Sprinkle with the sugar. Combine the apples, cinnamon, brown sugar, and lemon juice and divide between the pastry cases. Bake for 20 minutes or until the apples are soft and the pastry is golden and crisp (longer than 20 minutes I found)
