Tomato Three Cheese Tart....by Jessica


Three cheers for the tomato tarts! Super delicious and easy to make too. Even Ian liked them and ate the green stuff without even asking what it was. Although I was confused, because the recipe called for frozen shortcrust and I didn't have time to hunt around so I just bought frozen puff pastry. So...has anyone ever seen frozen shortcrust anywhere?

On a shopping side note, today I put straws in my cart and had a little mental debate as to whether they should be allowed as a purchase. I put them in my cart, kind of shoved under some apples & oranges (for fear a blog reader would see my cart and be aghast at the wasteful purchase) then decided at checkout that if I had to hide the straws then they probably shouldn't be purchased. So they got flung in the magazine rack between In Style & People (which is also definitely out for purchasing). Back at home, Zack told me he thought straws were okay to buy (and also looked at me like *really? I think you may be going overboard...") Okay to buy or not? Hmmm....

The question is are straws a necessity that you would have to purchase? If so, then I would say for your health you would be best to purchase clean new straws. BUT do they not sell hard plastic straws that are washable? Th trouble would be finding some used ones...and that would still be gross. Bingo, just thought of an idea....when you go to a fast food restaurant stock up on their straws!! ...Juli

Aren't straws considered a neccesity item? I mean, like when you are sick or something...it's just hygenically acceptable and smart to use a straw to protect your family from germs. Especially if you don't have a dishwasher! :)

Your tart photo made me drool a little! :) The very entertaining debate on straws will be mulled over in my mind while doing laundry today!

Yes Bobby it's vegetarian...here's the recipe:
2.5 oz frozen shortcrust patry sheets
3/4 cup ricotta cheese
2.5 Tbs. chopped basil
2/3 cup grated parmesan cheese (divided)
1/2 cup shredded mozzarella cheese
8 oz. cherry tomatoes, halved
olive oil for brushing
sea salt & cracked black pepper

Preheat the oven to 355°. Trim the edges of the pastry sheets, then cut each sheet in half (I didn't understand this at all so I just chopped pastry sheets into shove in your mouth size squares) Combine the ricotta, basil, and 1/3 cup parmesan cheese and spread over the pastry. Top the ricotta with shredded mozzarella and 1/3 cup extra parmesan. Top with cherry tomatoes (cut side facing up). Brush with olive oil (I drizzled) and sprinkle with salt & pepper. Bake for 20 minutes or until golden (which was longer than 20 minutes).
Wait til it cools, longer than you think it needs or it will burn the roof of your mouth off. And then it will hurt when you shove the next hot piece in your mouth because it will still be too hot because you still haven't waited long enough for it to cool... Enjoy!
