Banana-Walnut Shortbread...by Juli


The healthy organic-ness of my cookbook has left us somewhat disappointed when it comes to desserts. Ok, I admit it, I am a dessert snob. Working as a pastry assistant has lead me to believe that its ok to labor for hours with the richest ingredients for a superb dessert. So I braved "Early Spring" and was pleasantly surprised with it's yummy-ness (am I adding ness to every word or what?!?!) I came in with a good attitude from the very beginning when I bought my whole wheat pastry flour. You see the company  RED MILL is owned by this sweet old man named Bob and I just watched this story on Yahoo that said that he just gave his company to all his employees....what an awesome boss!


Ok, back to the shortbread.....It was good! I think it would be good with some coffee or tea, but I paired it with the yummy-est non-dairy chocolate ice cream. Wipe that look off your face and give it a try! It's called Purely Decadent and it is the BEST! Kit likes it...and if you know him he has very high ice cream standards!

That looks and sounds tasty (except for that ice cream, hmm I'm not convinced til I try it). I love the cookies/cutting board photo. Really nice.

I just sneaked a scoop of the ice cream right now (yikes 11:20 am) and I am telling you it is amazingly good! You HAVE to try it!!!

OMG! That looks delicious! I love Purely Decadent non-dairy ice cream! The chocolate coconut milk flavor is divine, and way lower in fat and calories than dairy ice cream.

Ok, serving size is a half cup: 180 calories, 27g carbs, 7g fat, 0 cholest., 5g dietary Fiber, 20g sugar, 2g protein.

Here's whats in Breyer's strawberry ice cream: 1/2 c serving size: 120 calorories, 5g fat, 15mg cholest.,15g carbs, 0 fiber, 15 g sugar, 2g protein.

Trader Joe's Vanilla: 1/2c serving size: 260 calories, 16g fat, 110mg cholest., 24g carbs., less than 1g fiber, 23g sugar, 4g protein.
