Spring Fever....by Juli


After a busy weekend I ended up getting sick Monday morning.....with SPRING FEVER!!!
The warm sun rays begged me out to come play...and I didn't let it down!
I ripped out weeds like a mad lady with worms flying to-and-fro
and I collected moss for my moss terrarium
...a little mini indoor forest.
It encouraged me to run away from the "Deep Winter" section of my cook book
and leap forward to "Early Spring".
My OCD is really making me feel guilty for not finishing deep winter,
but I just couldn't brave the left over recipes yet!

So tonight I made Asparagus and Scallops.
It was kind of exhilarating because I have never
made scallops before, but they came out perfectly!
Seeing them turn golden in the pan, I reflected on
"Hell's Kitchen" knowing Gordon Ramsey would say as I awaited nervously....
"Excellent Scallops! Perfectly cooked!"

Phew.....a gold star for the scallops!

Asparagus and Scallops

3 T EVOO
3 T fresh lime juice
2 T sugar
2 garlic cloves
1 whole canned chipotle chili pepper
pureed or minced
3 T finely chopped fresh cilantro
1 pound sea scallops
3/4 cup yellow cornmeal
1 t ground coriander
1/2 t salt
1/4 t pepper
1 pound asparagus, trimmed
2 T unsalted butter
Lime wedges for garnish

In a small bowl, combine the oil, lime juice, sugar, garlic, chili pepper, and cilantro.
Let sit for at least 30 minutes
Remove and discard the tough muscle from the scallops
Ina medium bowl combine the cornmeal, coriander, salt, and pepper.
Toss the scallops in the cornmeal mixture and set aside.
Steam Asparagus until tender crisp.
Remove to a platter and keep warm.
Place butter in a skillet and melt over medium heat.
Add the scallops and cook 2-4 minutes, turning once, until lightly browned and opaque.
Top asparagus with scallops and drizzle with the dressing.

Let your OCD take a rest already. What are you going to do this November & December?? It's going to be winter again this year.

Oh yeah....No, I thought of that. I will leave the anchovy dip and beet pasta for then! I am afraid those will be straight to the trash-ers. Living In California practically everything is available year round.
