Salmon Baked in a Foil Parcel with Green Beans and Pesto (recipe in comments)
So super easy and yummy...if your family will eat fish that is.
By the way, has anyone tried Trader Joe's Baked Rice Snacks (seasoned with soy sauce and mirin) found in the frozen section? I love to heat one up at lunch time with my leftover...whatever. You know us Troups and our rice!

Salmon Baked in a Foil Parcel with Green Beans and Pesto
Serves 2
2 handfuls of green beans
2 lemons
2 x 7 oz. chunky salmon fillets, skin on (?), scaled and bones removed
2 heaped tablespoons green pesto
olive oil
salt and pepper
Prepare
Preheat oven to 400 degrees
Trim beans
Halve one lemon
Place handful of green beans in middle of 2 layers of alum. foil
Lay salmon across beans skin side down, spoon one tbls. pesto, drizzle with olive oil and squeeze over juice of 1/2 lemon, season with s&p
Pull alum foil edges together and scrunch them up to seal the parcel
Repeat steps to make 2nd salmon parcel and place both foil parcels on sheet pan.
To Cook and Serve
Put the sheet pan into your hot oven and cook for 15 minutes
Remove the pan from the oven and let it stand about a minute before carefully unwrapping and checking that the salmon is cooked through
Serve with lemon wedges and baby potatoes
