Double Delicious?

When you have a kid like Phoebe (whom we've determined likes anything with fat, sugar and salt but not anything with whole grains, fiber, protein or vitamins) the challenge of "Healthy Food" month takes on a whole new meaning. Okay, I know she won't eat anything that resembles my lunch today:



So I took on the challenge of using Jessica Seinfeld's new cookbook "Double Delicious" to sneak vegetables onto Phoebe's plate at dinner time.


The author's basic idea is to incorporate pureed vegetables (usually cauliflower, butternut squash or carrots) into dishes like Teriyaki Chicken, Chicken Enchiladas and even Chocolate Peanut Butter Pie! Great idea...in theory. But sadly tonight's dish, Creamy Chicken, resulted in a full on gag from the picky end of the table. If anything, it was just bland. Well, there's always tomorrow night. I promised the girls "breakfast for dinner" Let's see how Banana Chocolate-Chip Waffles with carrot puree goes.

Yeah I have a picky eater in my house. If it's not "plate lunch" quality then it's inedible. Good thing he will be moving out in a month.

That first picture looks tasty BTW!

Yeah that does sound good... if your kid would eat such things as chicken teriyaki or chicken enchiladas. Let me know how it works out for you :)

I got Jessica Seinfeld's first book "Deceptively Delicious" a couple years back. I think those recipes were more kid favorites (chicken nuggets, mac & cheese, turkey chili) all made w/healthy ingredients & veggie purees. At the time Ryan was still eating baby food, so instead of making the puree myself I'd use jars of baby food. Pureed carrots in mac & cheese - only Mom knows :)
P.S. I can email you the recipe for the chicken nuggets - some of the ingredients: whole wheat breadcrumbs, flaxseed, & broccoli, spinach, or sweet potato puree. Maybe it fits into healthy month?

Anona-I have learned from experience that your kids do eat chicken enchiladas...you just have to threaten them! ;) Actually, I think what I did was more like begging...
