Lunch Swap....by Jessica


It's a lot easier to eat healthy when people around you are eating healthy too. A co-worker of mine, Cadi has been working at eating healthier and working more fruits and veggies into her diet. We decided to host our own little lunch swap. Our first week was quite delicious; we had a Bulgur Wheat & Pomegranate Salad with Grilled Chicken on Monday and Chipotle Black Beans with Grilled Chicken on Thursday.

That sounds great! I need someone to swap with...lentils and quinoa are getting old! I think I am going to use any free time I get this weekend to stock the fridge with some different healthy lunch options...

We definitely have to keep this up, it was fun! Having a lunch surprise during the week keeps being healthy and frugal interesting. Can't wait for next week, I'm already scheming!

And the chicken and black beans was so yummy, the pickled jalapenos were the perfect touch!

Awesome idea. Good way to keep costs down. I'm always tempted to run to wholepaycheck (whole foods) for lunch. This is def something to think about. On a different note, are you guys on yelp.com? It would be an good way to plug thejproject and Julie's cute little hand mades. Just a thought : )
