Pesto....by Jessica


Though basil and pine nuts are the most common base for pesto, no one says those are the only ingredients you can use. Use greens such as kale, spinach or cilantro and mix up your nut choice with walnuts, pecans or almonds.

My veggie box gave us a plethora of spinach so I made a pesto with about 2 cups spinach leaves, a hefty handful of pecans, about 1/4 cup of parmesan cheese, 1 garlic clove, a generous squeeze of lemon, salt & pepper to taste and about 1/3 cup olive oil. Whiz together in your food processor or blender and you have a unique but still tasty version of pesto.

p.s. I didn't tell the kids and they gobbled it up - they don't need to know how much spinach they just ate.

It's so easy to make - I think it's one of those things that tastes more complicated than it really is!
