What I've been craving for lunch...by Jessica

143

There's a hippy dippy little restaurant in town called Cafe Gratitude and though I feel it's a little overpriced and the employees are always a little too eager to find out what you're grateful for, I do have to admit I like their food. I recently had their *"I am Terrifically Fantastic Bowl" and I've been re-creating it at home for lunch.

Ingredients:
Brown Rice
Chopped Kale
1/4 Avocado
Nori Strips
Chopped Cilantro
1 Tbs. Rice Wine Vinegar
1 Tbs. Honey
1 tsp. Soy sauce
1 tsp. Sesame oil
Salt & pepper {to taste}
Chili paste {to taste}

It doesn't sound very good and it looks even worse, but it's what I've been craving for lunch.

*Name is made up, not sure what it's really called but it's something that will make your self-worth soar as you order it.

Sounds great to me! My fat husband said: sounds great, except for the kale and avocado...yip, that's my guy! Is the kale cooked? I'll try that this week!

yes closing. and when i said to the hippy guy behind the counter that I was bummed to hear they were closing he looked shocked and surprised and then said, i don't know i only get my news from the weather channel. so i guess i broke it to him that he's shortly losing his job.

m- kale is raw. it really does taste good. how can you go wrong when there's sesame oil and chili paste though, right?

They say its closing because some employee related lawsuit. Personally never much of a fan of their food because it was something you could easily not cook at home. BUT their desserts are amazing and I don't think I could make those easily at home.

Jess, yes anything with chili paste is awesome. I was telling a Japanese bro in our hall about the handrolls you taught us to make but I was lamenting how I can't get smoked salmon easily & he suggested I use canned tuna...I'll do it but smoked salmon seems better. I imagine smoked salmon would be totally yummy in this dish too! ooh, I'm hungrier now :-)
