Kids Choice Meal....by Jessica

I had the kids look through my cookbook and choose what they wanted me to cook for them. Ian chose Chili and Basil Stir Fried Prawns, which may come as a surprise to any of you who know Ian, but he really has become quite fond of shrimp. Anya chose Mango with Lime and Vanilla Syrup, which was no surprise; she loves fresh fruit. Both items were a hit and got the big thumbs up from both of them!

Chili & Basil Stir Fried Prawns
1 Tbs. vegetable oil
4 large red chilies, seeded & sliced ( I wasn't sure what chilies to use and I used 2 bird chilies and they were HOT)
2 ts. grated ginger
2 lb. raw prawns
2 Tbs. fish sauce
1 Tbs. brown sugar
2 Tbs. lime or lemon juice
1 cup small basil leaves
Heat a frying pan or wok over high heat. Add the oil, chilies and ginger and cook for 1 minute. combine the fish sauce, sugar & lime juice and pour over the prawns. Cook, stirring, for 3 minutes or until prawns are just cooked through. stir through the basil.

Mango with Lime and Vanilla Syrup
1 Cup water
2/3 Cup sugar
2 Tbs. lime juice
1 Vanilla bean, split ( I didn't have so I used 1 tsp. vanilla extract)
4 mangoes sliced ( I used 1 mango and i blood orange)
Place the water, sugar, lime juice and vanilla in a small saucepan over the low heat. Stir until the sugar is dissolved. Increase the heat and boil for 7 minutes or until slightly thickened. Set aside to cool. Spoon over the fruit to serve!

Yes hair free. Trader Joe's was very accomodating and even upgraded me to jumbo prawns. Jessica
