Asparagus and Creamy Brie Salad.....by Jessica

Tonight I walked in the door from work and did not want to make dinner. But I did. I threw some chicken in the oven and made this asparagus, brie & smoked salmon salad. I don't think you can go wrong with those ingredients, although if I'm going to have smoked salmon and brie I think I prefer it on crusty french bread. Don't worry, I didn't force the kids to eat any of the delicious stuff.

I ran to the thrift store on my lunch and was rewarded with something I have been needing. My wallet, as much as I love it, is on it's last leg and I patiently waited and found one today that fits my needs.

4 large slices of bread grilled (broiled)
3.5 oz. smoked salmon slices
5 oz mixed salad leaves
3 bunches asparagus, trimmed & blanched
5 oz. creamy ripe brie, sliced
DRESSING:
2 Tbs. lemon juice
2 Tbs. olive oil
sea salt & cracked black pepper

Arrange the bread, salmon, salad leaves and asparagus on serving plates. To make the dressing, combine the lemon juice, olive oil, salt & pepper. Pour over the salad, top with the brie and serve.

Cute Wallet...and yummy looking salad. I agree though, it would be really hood on some sourdough bread! Althouh Donna Hay wouldn't suggest that because they don't have sourdough in Australia.
