Roasted Prosciutto and Bocconcini Salad & Blueberry and White Chocolate Mousse...by Jessica


Yesterday we walked to a little fair fundraiser down the street from our house. Zack wanted to get a hot dog so before we left he said he wanted to drive to the bank to get some cash. I didn't want to go to the bank so I convinced him to take a roll of quarters from a stash of coins we'd recently rolled. He kind of grumbled about it "we're going to pay for everything with quarters?" But he finally relented. Off we went. While we were standing in line the cashier said, "Oh NO! I'm going to have to go to the bank to get change, we are ALL out of quarters." Zack said "I'm going to pay with all quarters!" and the lady was sooo appreciative. He didn't look at me, and I didn't look at him...but you all know I was wickedly smiling on the inside.

So on to my recipes...I almost feel bad counting the salads as a recipe because they are so easy. French bread topped with prosciutto wrapped bocconcini (fresh mozzarella balls) then drizzled with olive oil and baked til warm and crusty. Serve with greens tossed with balsamic and olive oil. Very tasty. Blueberry mousse was tasty but we're not fighting over the leftovers.

I also wanted to share this picture I took when my whole family was over last week. It makes me laugh because there were still MORE people in the kitchen. It looks like my living room has exploded with people!
