Yummy in my Tummy...by Juli

A few years ago my buddy Laura introduced Larabars to me. What are Larabars? Check out their website {here}. Basically they are gluten free, dairy free, soy free, non-gmo, vegan, kosher (and raw although they don't advertise that) bars that consist of nuts, fruits and spices...and occasionally some good 'ol chocolate.  The only problem is that these little packages of yummy goodness come with a price tag of about $1.60 (+/-) per bar. I don't know about you but that adds up really quickly! 

So here is my home made "Cashew Cookie" Larabar and believe me it taste just like the original at about the fraction of the price. Can you guess how many ingredients there are? 2! Just like the original Larabar it's made of dates and cashews. Its so nice looking at the ingredients and read just a few simple ingredients with no sugars or preservatives added.



You can make endless combinations of flavors like:
Apple pie
Cherry pie
Lemon 
Coconut Cream Pie
Peanut butter and Jelly
Key Lime Pie
Ginger Snap
Chocolate Chip Cookie Dough
Cinnamon Roll
Pecan Pie
Carrot Cake 
Banana Bread

....and on, and on , and on....

Recipe: Cashew Cookie Larabar (makes 2 bars)
1/3 c chopped dates - Pulse in food processor until very mushy. Put in a medium bowl.
1/2 c cashews - Pulse in food processor until well chopped. Put in the bowl with dates

  • Put out two pieces of plastic wrap or wax paper for shaping
  • With your hands mush the dates and cashews together until all the cashews are incorporated into the dates.
  • Divide in half and shape into bars with the plastic wrap or wax paper. Wah-La you're done!
