Freezer 10 for 1 Challenge....by Justine

Marcella, Beckie and I took on our own 10 for 1 challenge this month and I can't wait to tell you about it!

April is going to be pretty busy for us so we came up with a plan to shop, cook and freeze at least 10 meals for our families in 1 weekend....cause who doesn't come home from a long day and feel like this at the thought of cooking dinner for the fam....

Mind you, I've done this before. Only my level was spaghetti, enchiladas, lasagnas and the like. I've never done it Martha Stewart style. Tomato sauce and other pots full of goodies simmered on the stove for hours...


But first there was the GROCERY SHOPPING!

Poor Phoebes endured the long morning of Cost-co, G&G Market (did you know they have the best tasting italian style canned tomatoes? Neither did I!), and Whole Foods.

A long lunch with a Coca-Cola saved the day so that we could go home and start cooking. I hear what you're telling me, Baby...no more caffeine I promise!


It was a LOONG weekend (okay, truthfully, I'm finally finishing today - Tuesday) of cooking but we kept telling ourselves how much we're going to enjoy eating it all next month!

Our freezers are now packed with: Moroccan Pork Loin with Apricots and Lemon, Spinach and Sausage Manicotti, Enchiladas, Burritos, French Onion Soup with Gruyere Cheese Croutons, Garlic Mashed Potatoes, Fish Cakes, Chard Bean and Pancetta Soup, Greek Chicken Cutlets, Soy and Ginger Flank Steak, Chicken Cacciatore, Egg Foo Young and finally Carrot Apple Walnut Coconut Muffins!

The only things that would have made this article even better was if it included a master shopping list and printable labels. Oh well, I'm all prepared for...next time? Marcella...Marcella? Are we still friends?


Yes! I'm tired. But so thankful to the Colettis for letting us invade their kitchen and house for a great cooking weekend! We planned on playing cards during "down" time but that never happened! We will have to put one of those lovely meals in the oven, RELAX and play some cards!

good idea, I hate cooking, maybe getting it over with in one day will be the best way to go!
