Meal Plan....by Jessica

Hypoglycemic tendencies run in my family and if food isn't administered in a timely manner, things unravel pretty quickly.  If you happen to run across one of us and we seem to be a little on the snappish side - just toss a piece of bread our way, wait for us to eat it and then you can resume conversation in a few minutes.



I know there's a lot of people who understand the "I must eat NOW" problem and also have granola bars stashed in their purse or get nervous going somewhere if you're not sure what the food situation will be.

That's my explanation for this post because on Monday, Wednesday and Thursday's at 5:30pm I go to bootcamp.  That totally interferes with dinner time,  so I just have to make sure that dinner on those three nights is stuff that's either simmering on the stove, or in the oven cooking so when I walk in the door we can eat within 5 minutes.  Or else I get cranky.

Here's what's going on this week.

M: Beans, rice, chile's stuffed with rice, raisins & almonds
T: Chicken w/soy, orange, ginger sauce, coconut rice & veggies
W: Garbanzo, eggplant, potato curry & rice & leftover chicken (for the non-vegan people in the house who would make my life miserable if I made them eat an all vegetable curry)
Th: Minestrone soup w/bread
F: Pizza

Do you have a meal plan for the week or do you just wing it?

Not having kids in the house, meals tend to be a bit easier -I think-... I have a staple of fresh and frozen vegetables that I pick from: onions, leek, cabage, salad, spinach, carrots, right now tomatoes etc etc. besides this I make sure we always have either quinoa, rice etc in the house...
I have a few favorite meals I like to make, Friday night is steak night at our house - Sort of family night...
So I can say I sort of wing it...

I have food anxieties as well... all my pioneer buddies know me for my foods that I pull out of my purse all day long!

We understand this too, we have said more then a few times in the car on the way home from meeting, "let's just not even talk until after we eat..."

@Mirjam - Steak? How come I thought you were a vegetarian?
@Becky - Yes, food in the purse is a must!!
@Ruthie - Yep! And then it makes me mad if Zack tells me let's talk after you eat, and I get all snippy "I'm NOT hungry" and then I eat and have to apologize.

ive been working on a meal plan...it's so hard. we are vegetarian...and I try to make it mostly vegan..which makes it even more impossible. Vegan doesn't always happen though. My goal is to have a monthly meal plan. And I need to work on a weekly staple grocery shopping list...

@Jessica - yeah vegan is really hard. I used to buy one chicken a week to feed the kids, and now we're down to 4 chicken legs a week so we're getting there. (I still buy Ian lunch meat for his sandwiches) oh and we eat cheese and the kids suddenly went crazy over whole milk so I thought maybe they're needing some calcium so I keep buying it for them. And eggs. Okay, we are nowhere near vegan ha ha.
A monthly meal plan would be great!

Im not super vegan either...It a work in progress...and when i say work in progress i mean i just ate a bowl of ice cream and non vegan cookies. I don't eat meat..I stay away from dairy because it hurts my stomach, but i will still make eggs and eat fish...we should start our own kind of vegan..what do you say:)?

I plan out our meals for the week on Sunday. Have I showed you Pepperplate? It's an awesome recipe/food calendar website/app. You can pin all sorts of recipes from various sites straight to your pepperplate, convert ingredients to a grocery list, and make a calendar for the week with a direct link to the recipe for each day. There's also timer and an option to scale your recipe and it does all the hard math for you!

@Jess - my mom calls it flexitarian...or cheatatarian :)
